Over Night French Toast Casserole

I am posting this because 1. it sounds good and 2. my little boy would LOVE this. He loves French Toast. Mommy's Kitchen has some wonderful recipes and this is one of them. It is simple and good to make ahead. So, if you are short on time in the mornings you can prepare this the night before. And if you have some left over bread (which that is not usually the case for us) you can use it up in this recipe.

Here is the recipe and she even has a video. So make sure to check it out on her site.

Overnight French Toast Casserole

1/2 cup butter, melted (1 stick)
12 - slices texas toast or any leftover bread
1 - cup brown sugar
1 - tsp cinnamon
1/4 - tsp nutmeg
1/2 - cup chopped pecans (optional)
1 - tsp vanilla extract
5 - eggs
1 1/2 - cups milk

Melt butter and pour in a 9x 13 . Mix together brown sugar, cinnamon, nutmeg and if nuts if you are using them. Whisk eggs, milk & vanilla together. Layer bottom of pan with half the bread pieces Sprinkle half brown sugar mix over the bread. Layer second half of bread. Pour egg mixture over the bread slices, making sure all are covered evenly. Sprinkle remaining brown sugar on top. Cover and refrigerate overnight. In the morning, remove from the refrigerator and cover with a new piece of foil. Preheat oven to 350 bake the casserole for 30 minutes. Then uncover and bake 15 more minutes french toast bake should be browned and set. I like to remove mine from the oven and pour some maple syrup on top and place back in the oven to caramelize for about 5-7 minutes.

Friendship Casserole

I have heard of a friendship bread but never a friendship casserole. How sweet is that? It would be great to give to our parents, the grandmother, mother, and daughter that just moved in next door, or my best friend who is going to have a baby soon!!

Friendship Casserole

2 - lbs ground beef
1 - 48 oz jar spaghetti sauce
2 – tablespoons sugar
1 (16 oz) - pkg medium egg noodles
1/2 - cup margarine or butter
½ - tsp onion salt (or onion powder)
½ - tsp garlic salt (or garlic powder)
½ - cup grated Parmesan cheese
1 - 12 oz pkg shredded mozzarella cheese

Preheat oven to 350ยบ Brown meat and drain fat. Add spaghetti sauce and sugar to meat; simmer 20 minutes. Cook noodles as directed (AL dente); drain and toss with margarine, salts and Parmesan cheese. Spray two 9x13 pans with non-stick spray. In both pans layer half the sauce, all the noodles, rest of sauce; top with mozzarella cheese. Cover with foil; bake 45 minutes.

*Note: Since this recipe makes enough for two casseroles, plan one for your family and one for a friend. Think of someone who might need a reminder that they have friends who care about them - a new mom in your neighborhood, a family who’s moving, someone with an illness.

Oh, how cute are these shirts??
I would like to make 2 for each of my little ones. Something different than I love mommy/daddy or I am a big brother/little brother or big sister/little sister.
